That's why we are excited to share with you a simple and authentic Indian recipe that you and your kids can make together at home.  I've found that with kids - and especially picky eaters - they are much more willing to try something new if they help to make it! This recipe has some basic peeling and chopping - great skills for kids to practice in the kitchen, plus the ingredient list isn't too overwhelming.  You can adjust the spices to suit your preference.

 

Simple and Easy Aloo Gobi (Indian Spiced Potatoes and Cauliflower):

Ingredients:

  • 1 medium-sized cauliflower, cut into small florets
  • 2 medium-sized potatoes, peeled and cubed
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of red chili powder (optional)
  • Salt to taste
  • Fresh cilantro leaves for garnish (optional)

Instructions:

  1. Heat the oil in a pan and add the cumin seeds. When the cumin seeds start to crackle, add the potatoes and cauliflower florets.
  2. Add the turmeric powder, coriander powder, and red chili powder (if using) and mix well.
  3. Cover the pan with a lid and let the vegetables cook on medium heat for about 15-20 minutes, stirring occasionally.
  4. Once the vegetables are cooked, add salt to taste and mix well.
  5. Garnish with fresh coriander leaves (if using) and serve hot with rice or naan bread.
